Creamy Fusilli with Vegan Bacon and Sauteed Veggies

Ingredients:

1 serving of whole grain fusilli pasta
1 cup of chopped champignons
1 leek, sliced thinly
1 red onion, chopped finely
1/4 cup of chopped fresh parsley
1/2 cup of vegan smoked bacon strips
3 tablespoons of olive oil
1/2 cup of vegan cream
1/4 cup of nutritional yeast
Salt and pepper to taste
Instructions:

Cook the fusilli pasta according to package directions until al dente. Drain and set aside.

While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the champignons, leek, and red onion and sauté for about 5 minutes until the vegetables are soft and lightly browned.

Add the vegan smoked bacon strips to the skillet and continue to sauté for another 3-4 minutes until the strips are crispy.

Reduce the heat to low and add the vegan cream and nutritional yeast to the skillet. Stir until the cream and yeast are fully combined with the vegetables and bacon.

Add the cooked fusilli pasta to the skillet and toss until the pasta is coated with the cream and vegetable mixture.

Serve hot, garnished with fresh parsley, and enjoy!
