Rainbow Palette Plate


 

This salad is not only delicious but also provides a variety of nutrients that are beneficial for your health. And if that's not enough to put a smile on your face, it's so vibrant and colorful that you'll feel like you're eating a rainbow!

Ingredients:

mixed greens (Baby Romaine lettuce, spinach, arugula, or any other greens of your choice)

½ cup of sliced strawberries

½ cup of blueberries

½ cup of diced mango 

1 sliced peach 

1 sliced kiwi

few roasted pecans

½ cup of plain plant-based yogurt

1 tablespoon of honey

1 tablespoon of apple cider vinegar

Salt and pepper to taste

Instructions:


Wash and dry the greens, and arrange them on a large salad bowl or plate.

Add the sliced strawberries, blueberries, diced mango, sliced peach, and sliced kiwi on top of the greens.

Sprinkle the roasted pecans over the fruit.

In a small bowl, mix together the plant-based yogurt, honey, apple cider vinegar, salt, and pepper until well combined.

Drizzle the dressing over the salad.

Serve and enjoy!
